Does Out of Office write anything back to my calendar, Slack or Tempo?

No.

Every integration runs one way, into Jira: the calendar integrations ask for read-only access and write nothing back to Microsoft 365 or Google, the Slack integration reads your status, and the Tempo integration only reads planned time.

Nothing is announced or posted back to any of them.
